Science gives way to art when a winemaker puts together a blend of wines that is greater than the sum of its parts. We evaluate the characteristics of the parts we have to work with and then create a blend that shows the best of our Cabernet Sauvignon (51%), Merlot (30%), Petit Verdot (15%), and Cabernet Franc (4%). A light oak aroma balances dark berries on the nose. The flavour opens up to reveal layers of currants and juicy red fruit, subtle juniper and mocha. A full mouthfeel is complimented by soft tannins that provide a very pleasant and lasting fruit filled finish that will have you reaching for another sip.
In the winery, we pair this wine with a dark chocolate cherry truffle, made with tart Morello cherries. It pairs equally well with Steak au Poivre or a pork loin roast, complimented with a hash of peppered potatoes and Granny Smith apples.
